Ingredients
  • 1 cup Blue Cornmeal
  • 1/3 cup Maple Syrup
  • 2 eggs (or chia "eggs")
  • 1 tsp Baking Powder
  • 2/3 cup water
  • Fresh Fruit (optional)
Instructions
  1. Mix all ingredients together

  2.  Grease a griddle with sunflower oil and bring to medium-high heat

  3. Once hot, pour a 1/4 cup of batter onto the griddle

  4.  When the bubbles on the surface begin to pop, it is ready to be flipped

  5.  Should finish cooking shortly after and be ready to serve

  6. Top with fresh fruit

Note

Optional:

Lightly drizzle the cooked pancakes with maple syrup for extra sweetness.
